Apple Pie from scratch

Have you ever made a pie from scratch? I mean the whole thing! Crust and filling? It’s not as hard (or as easy) as you may think! I’ve been called “The Cake Lady” (and didn’t enjoy it) but I think I may have found a new calling in pies as well!

One of my old college roommates came down for a visit and during naptime, we decided to go for it. Let’s make a pie!  We used the Joy of Cooking’s deluxe butter crust recipe (because it called for the least amount of Crisco and I like to keep that to a minimum) and Apple Pie recipe. We made the crust, chopped the apples, added some delicious spices and threw it in the oven! Here is Kristin adding the finishing touches: cinnamon sugar on top!

Once baked, it had to cool for 3-4 hours. That is not fun. I prefer to eat my creations moments after they exit the oven and by the time it was cool, I wasn’t hungry anymore! So we had some for breakfast!  Here is the finished pie:

A sweet and simple dessert

This dessert is not one you make when you are trying to impress your friends. Instead, it’s one you make for family – or just for yourself when you want something yummy and easy. The great thing about it is that, if you’re like me, you just might have all the ingredients to make it in your house!

I just happened to have a sample pack of Oreos (6 cookies), some french vanilla jello, some butter, milk and a chocolate bar. What I made can only be called: perfection. Or at least, delicious enough for seconds!

To make the crust, food process the 6 Oreos (or more if you have them – I think 10 or 12 would have made a nice thick crust!). Add a little melted butter (1 T or 2) and press it into the bottom of a pie plate.

Make your jello according to the instructions on the side of the box. It will start to solidify right away. pour it on top of your Oreo crust and refrigerate for about an hour. When you’re ready to serve, shave the chocolate bar into pretty little shavings on top of the pie. Cut. Serve. Eat.
