Need to celebrate a little princess in your life? Madalyn, my “cakery intern”, has gotten very good at making a princess crown! First for Natalie:

And then Reagan and Mackenzie:

The colors differed a little but the vanilla cake with a cream filling was deliciously adorable!

Swedish Princess Cake

This is the second time I’ve made this cake. Both times for a great friend of mine, Kathleen. She introduced me to the idea of a Swedish Princess Cake and it gets easier to make each time!

The Swedish Princess cake is a layered cake with many different parts. My husband laughed when he saw the prep time read: 6 hours to 1 month. It literally could take you that long if you wanted!

The cake starts with a thin layer of vanilla genoise cake topped with raspberry jam and a small bit of homemade whipped cream. Then you add a second thin layer of cake and a fat layer of homemade custard. Lastly, the third layer of cake is added and covered in a mound of whipped cream that extends around the sides as well. Traditionally, it is covered in a thin layer of marzipan but I had fondant on hand so I used that. You should really put a real rose on top but, again, for convenience, I made one from fondant.

I’d be happy to share the recipe if you are interested. I will warn you that it is about 5 or 6 pages long… Email me if you’re interested and let me know if you’ve tried a Princess cake before!

Some recent cakes

Here are a few cakes I made recently:

Amy's Baby Shower Cake

This baby shower cake was fun to make. The sea animals were made with help from my friend, Madalyn. They are made from fondant and edible marker. It turned out super cute!

Riley's Whale Cake

This is Riley’s second birthday cake. I love the bubbles with the words in it. It turned out better than I had hoped!

Kirk's birthday cake

This last one isn’t as clean and perfect as most of my cakes. It was made for my Dad’s 60th birthday party and was finished just before the party started! The highlight of this cake is the postcards that are made from a square fondant piece and edible markers. It tasted delicious and that is all that really matters, right?

I hope you are finding time for fun hobbies this spring!

Madilynne’s 1st Birthday Cake

This is a popular design among cakes orders. I think this is the third time I’ve done something like this:

Madilynne's 1st birthday cake

I love doing first birthday cakes! I get to make a cake that I know adults will love and I get to make a sweet little cake for the birthday boy or girl as well! It’s a way to be creative in baking and decorating that I enjoy.

Madilynne's 1st birthday cake

Madilynne’s cake was an applesauce cake (no sugar) that is decorated simply just for her. I have used this recipe plenty of times! It’s super simple and can be made as muffins if you have any leftover batter. My son particularly enjoys the muffins and I don’t mind giving him one as I know what is in it! I’d be happy to share the recipe if you want to try it!

Here is the adult cake boxed up and ready to go:

Dogfish Head Keg cake with YouDee Tap Handle

I know. Even the title of this post is too busy. But believe me, the cake wasn’t that bad. I did avoid the other 4 or 5 suggestions the mom had for this cake, so for that, I am proud!

Dogfish Head Keg Cake

As you can see from the picture, this is a 30th birthday cake. It was created to feed 100 people and to be in the shape of a barrel keg. The birthday boy loves Dogfish Head (which you should too and if you haven’t tried it – I highly suggest you do!)

He is a University of Delaware graduate as well so that is where YouDee comes in.

YouDee Tap Handle

This was a fun cake to create and had a mix of fondant, icing, and edible pens to make the final product. Even YouDee gave it a thumbs up!
